Is there a benefit to wearing a full helm, assuming its stats aren't as good as open helm + mask? I've heard it better protects against cranial / blackjack but isn't that just because of high AC vs. bash, which can be found on open helms too?

One non-obvious benefit I found is that you have an extra free inventory slot, but that's it...

Its because its a full helm, not because of the high AC

I remembered it wrong, so unless something has changed with it since this post, all that matters is the AC.
