Bind hands (or tie or truss) prevents any other unbinding of oneself (gag/blindfold/bind legs) on players, but on mobs, they lose bindings regardless of whether they feasably could or not.
I assume it's mainly a matter of mobs lacking intelligence, and so have a timer on all their bindings and not bothering with making certain the hands get unbound before the others, but wanted to mention it, just in case.

Bindings work a bit differently on mobs, and yes, they are basically just timed and they don't go try to unbind themselves.
