With 100% in all relevant skills, would I parry the same or not with wielding a dagger in primary and a sword in offhand or with a sword in primary and a dagger in the offhand? Thanks in advance.

It'll check for parry in your mainhand, then check for parry in your offhand, no bonuses or detriments to wielding in one hand or the other. So equal chance if you switch them around.

If parry picks a hand (50/50) that is empty, there is a chance it'll switch to the other if you have a weapon in that hand. It's also possible you just won't parry, unless you have ironhands or something like that.
So in that sense there's some strategy in choice of weapon and disarm skills, in that you may want your better parrying weapon (if they're different) in the hand that is less likely to get disarmed.

a pair of weapons parrying better than one, even if you don't have flourintine.
Now I wonder if it still does the 50/50 if you're say, holding a shield. Or a two-handed weapon.

Why does ambidextrous disarmer (or whatever) allow for 1 rd offhand disarms?
There is no edge/skill that allows a NORMAL disarm to do that, save for the Fluid Deception Legacy (and that happens roughly 30% of the time).
It just doesn't make a ton of logical sense from a game balance perspective.

I believe there's a post somewhere where it's stated it's the same.
I could be wrong. I also dislike that fact, and believe that the idea of a "primary" hand is primary for a reason, and you should default to try parrying with your primary hand more than offhand, and would vote to change that.
If I can find the post, I'll edit and put it here.
