Try to pick one that suits your character's personality well. You don't have to be religious and follow any of the Immortals. CF world is, however, such that Immortals exist there and are vastly more powerful than you are. Also, why insist being atheist? You could be a theist that does not follow any of the Immortals religiously and considers their religions philosophies where he may choose to amend from if he so wishes. Or you could simply be apathetic to the Immortals as whole and don't care much about them unless you happen to face one.
Priests have the upper hand when having does their god exist-kind of conversation with you in Thera. Ultimately, they could always bring you to meet their god. Thus, atheist that doesn't believe that Immortals exist would simply be wrong in Thera. Therefore I think that apathetic towards religions is a more viable route to take. Most of my characters, for example, haven't followed any particular god. Religion just wasn't a factor in their lives.

Sphere does not denote worship, nor does worship determine sphere.
Your sphere is effectively a birthsign, or essential force that holds sway over your spirit.
How the Gods of Thera interact with Spheres is kind of odd... They're sort of like Domains in DnD.

Except spheres are more like astrological signs (Pisces, Libra, etc.) and you get one whether you want one or not.

Spheres are kind of like your birth sign. They are forces that comprise the universe Thera is in. There are neat graphs and such that show you how different spheres interact and where they lye physically.
Gods typically hold sway over certain forces, but just because that force holds sway over you doesn't mean you have any connection to that god.
A sphere isn't your belief, it is literaly a part of who you are in Thera.

Many gods can cover one sphere, its more a focus of your character, what emobdies them most, sometimes that will mean you are the same sphere as a god, but the religion will only be partly based on the sphere and likely include others. If your god goes inactive, how traumatised are his priests going to be?is seeking out another god wise?
