Is there anything that helps against having all your protections instantly dispelled by a mage? Seems like they are able to basically get everything with one dispel. Is it level of spell? Does save vs spell help? What about if I was a dwarf with resist magic? That which does not kill us, makes us stronger.

Fiera'rroga Aegis, although, probably not that helpful to you.
Depending on what you are there might be an edge or two that's at least a little help as well.

Yup. It's mostly spell level vs. spell level; in most cases, that's all the check is.
Of course, note that some things can't be dispelled at all.

Dispel Magic is level based, and mage classes (generally) get spellcraft, meaning that they dispel at a higher level than normal. So, your level 15 flight potion doesn't stand a chance.
I may be wrong, but I don't think that your own saves or level do that much to help.
