Good shamans focus on their purity to blind their enemies with a focused beam of goodlitude. Results are a blind that is more likely to land, and has a chance to break through any immunities including gear and undead resistances. Evil could have a similar edge but something more along the lines of burning the enemies sight, or clouding it with darkness.

I don't really see something like this happening. Undead that are immune to blind aren't immune to blind because they have superhuman eyes but more like because they don't have eyes or don't need sight at all. Your random yellow mold doesn't have anything to blind, etc. There isn't really a breakdown of which mobs immune to blindness fall into which category, etc.
