Seems strange that he can put me to sleep after I've started fighting him already, even if I did miss it because of symphonic echoes.

This is one of those funky issues due to the "empty air near" issue. Basically, you are in combat with him by trying to kick the dirt, but he is not in combat with you because you kicked it at the empty air, which gives him a moment of opportunity to sleep you before combat really starts for both of you (when a blow is struck).
