Can you make it so you can hit a specific target when blood thirsting with a dash instead of the first person in the room?

That's part of the beauty...and pain...of bloodthirst. You don't have any control.

From the helpfile:
Driven by their unquenchable thirst for blood, Villagers possessed by bloodthirst will attack any they encounter (except other Villagers) on sight with unmatched ferocity.
