It is possible to have servitors as a ghost. If you leave an unbound servitor somewhere, you can bind it right after you die. You can always be sure of having at least a demon, devil, archon or angel available if you really want.
As for why you're not allowed to conjure as a ghost, my guess is that there are two reasons. One, because there are ways servitors could be used offensively against other PCs as a ghost (conjuring but not binding servitors that are aggressive to certain classes)
Two, because conjuring as a ghost would negate the danger of aggressive servitors, allowing you to dump all your mana into the conjuration and do so in complete safety.
But... servitors could be changed to be unable to harm any PCs except the caster, if the caster is a ghost. But maybe mucking around in the ghost code is iffy... There have been a fair number of ghost-related bugs.
If I'm wrong about why conjies can't conjure as ghosts, can someone fill me in on the real reason?
