Does anyone know how different weapons stack up in terms of parry? (Also interested in hth and unarmed defense for assassins...)

Because parry is weapon type vs. weapon type, there isn't a simple answer which is completely correct in all cases.

Here is some information
Skill check order
1. Distance 2. Spin 3. Evade 4. Parry 5. Block 6. Dodge 7. Armor use
From the most Offensive -
Axe Mace Whip Spear Polearm Exotic Flail Staff Sword Dagger
From the most Defensive -
Staff Sword Spear Exotic Flail Mace Dagger* Axe Polearm Whip*
So theres some answers for you.

You can only distance with a polearm and you can only spin with a staff/spear.
