1. What would be typical prefered dedications for Paladins based on race, something like this?:
Arial, Elf, Halfies: prefered: shield, alternate: monk
Dwarf: prefered: twohanded, alternate: monk(?) - Dex is perhaps too low for shield?
Human: All, though not as good as Storms at champion because of size?.
Storm: prefered: twohanded, alternate: champion
2. Whats the order from defensive to offensive?:
defender - champion - monk - avenger?
3. Elf Pally likely is the best suitable for a some pk/mostly explore character?

Arials can't be paladins as far as I know. Dwarves and storms tend to go with two handed dedication. Elves humans/halfs go shield usually. Might be because they are slightly frailer, so need better defenses, and the better dex plays into it.
Monk or champion are for the most part secondary choices just because I think none has yet figured a way to really play them to the best of their potential, but I could be wrong on that. I think those two have potential, but I would not choose one unless I was testing the dedication out. I would stick with shield or two handed, since they have edges available for them, and tend to fare better.

Dwarf I haven't played, but dexterity has no affect on shield. A dwarf shield paladin should do fine.
Storm shield paladins are great for exploring. Decent at PK too. I personally suck, but I did better than my usual with it so I will call it good. For exploring, they are good because no vulns, water breathing, physical resistance. Only draw back is low mana, but unless you are running some gauntlet, you should be fine stopping to recover.
I think people say elf shield paladins are good because they are defensive plus enough mana to spam wrath.
