I'm new to playing the class and am trying to learn the nuances.
How can you figure out what kind of sacrifices demons require?
Is it possible to use servitors effectively that aren't your alignment? Is playing a neutral conjie a waste of time? It seems to me like by choosing good or evil you limit yourself to servitors of those alignments otherwise you just get attacked all the time. Having played around with neutral conjies it seems you get access to both sides, but, get attacked alot no matter what.
Does pouring more mana into binding reduce the chances the servitor will attack you or just increase the chance of binding and the length of servitude?
Any tips or tricks on gettings servitors to tank?
Is it acceptable for goodies to use nightgaunts from an RP standpoint? For instance a fort conjurer?
Other good suggestions?

Mainly, pay attention. They'll grab or consume some things; that makes them happy. They'll jump on certain varying hated enemies; that makes them happy.

That's about right. Neutral has a lot more versatility, at the cost of struggling more for cooperation from anything.
Nexus conjurers are a special case and conjure whichever alignment/ethos is out of power with slightly less difficulty than a neutral conjurer would normally, but still not as easily as a conjurer of the appropriate alignmetn.

Just the latter two. I think.

Most of them won't willingly, and pretty much all of them get surly if they get beat up.

Possibly, but...

No. That's specifically going to be a problem. Shokai was very firmly against this and current Fort leadership has kept his ruling and reasons.
All that being said, a good conjurer who uses nightgaunts for something that isn't very, very defensible for his alignment/ethos/etc. is likely to be neutral soon. For example, I think a good-aligned conjurer who only would nightgaunt evil is workable, even if such a character couldn't be Fort.
