I think the bouncer should have attacked right here.

So why does cold be sleep set the bouncer off? It doesn't start combat.

The short version is, because otherwise there is no consequence for trying and failing.
There's certainly a way to use cold there without a bouncer kicking you in the metaphorical junk, though...
