Enlarge has the stat effects you see in score. Generally, being larger than your opponent is an advantage in parrying and being smaller than your opponent is an advantage in dodging. If you're dealing with two characters that both have both parry and dodge, changing size in this respect is usually roughly a wash because you get better at one and worse at the other by doing so and vice versa.
Berserk affects your skills as seen in your practice screen. If that modifies your dodge or parry skill it will have that affect accordingly.
