When you give other people permission to use and modify your work, you do not own the copyright unless they explicitly give it to you.

If you modify Apache's code (assuming the license allows it... I don't know anything about Apache), you can copyright the portion that you modified. Apache can't publish that without your permission, etc., and even if you let them, they would have to acknowledge you as the author.

All of this can change if you were their employee or had some other contractual agreement in advance, of course. This is why new staff members sign a contract with us, why we have Terms of Service available for the usage of our game and website, etc.
