I looked it up after seeing this because I wondered the same. Cutting the muscle on the back of a birds leg would still screw its ability to walk.

Bird forms are presumably flying around, even when they're not at high altitude. For instance, you can't trip them because they're flying. Using their wings. So hamstring probably shouldn't affect them w.r.t. movement.
